Honey. This process is done with the selected cherry menpulper so that it becomes a parchment. Parchment contains few lenders that contain mucilage. This mucilage layer is the main key to the honey process, because mucilage stores sugar & acidity content that is increasingly concentrated when the coffee is dried. Next the parchment is dried. Then, the parchment is peeled off the horn skin so that it becomes a honey product.
