Fully Washed. Starting with picking and selecting red cherries, then peeling the skin using a pulper machine so that it will become a Parchment. Parchment washed and soaked for up to 2 days or 48 hours. During soaking water is changed to maintain the stability of the taste. After that, the parchment is washed again and dried in the sun until it reaches a moisture content of about 20%. Then Parchment peeled off the horn skin using a huller machine. Seeds are sorted and become a Fully Washed product.

Taste Notes Fully Washed : Soft Acidity, Balance, Medium Body.
